It tastes so indulgent, I actually caught myself feeling a pang of guilt after eating a piece last week. Then I giggled, remembering that it was all veggies and nuts and seeds. Like traditional lasagna, this one is even better the next day after all the flavors settle in together.

But either way fantastic. I used the tofu option for the ricotta and it was delish. Great job making it work. Pat the zucchini dry and set aside.Oh my word this was amazing. This lasagna is SO good! I also added fresh garlic and some sundried tomatoes to the filling. If so, firm tofu makes a great replacement here.

I believe neither are made with nuts. The boys are great about carrying my finds without complaint. Let us know if you do some experimenting. Stir in spinach and season with salt and pepper. Hope that helps.
You know how I love my tofu ricotta , but this macadamia version is ridiculously easy no soaking required! If you try this recipe, let us know! Cheers, friends! Then drain thoroughly and proceed with recipe as written. Adjust seasonings as needed as the tofu requires a little bit more nutritional yeast, salt and basil.
Removing gluten is fine, but be careful not to overindulge in gluten-free products thinking they are healthy. The flavors in this recipe are out of this world. If glyten use already cooked noodles, I would do 30 minutes covered and 30 uncovered. Plus, it was super simple.
